Beginner's Question, Track mixing Options

Please help if possible.

I'm new to this field but am trying to use a single turntable to copy music to an appropriate format on G4 mac, and then when I've copied enough tracks, to mix them with a program and burn the finished product to cd, much like what one would use a standard mixer and two decks for. What program would you recommend for this, given that I'm after good enough quality to reproduce onto cd format?
