Maybe I'm just daft or otherwise missing something, but of all the music production apps I have I either lack the ability, or the knowledge of, to trigger samples using MIDI input. Basically I want to be able to have several different audio clips that I can 'play' as-is using MIDI interface buttons, and then also have one single audio clip that I can play at different pitches using a MIDI keyboard.

What app or apps can accomplish these relatively simple tasks?

I found apTrigga2, which looks like it should pretty much do what I wanted. Just in case though, if anyone knows anything else to accomplish this (especially freeware), I'd appreciate it!

esx (exs24?)24 in Logic will trigger any type of file.
Multiple bit and sample rates on the same instrument.

I don't know the sequencer you're using, but if you use Digital Performer, it has a plug in called "Trigger".

I've been using Deck to build my tracks, but I just started using Ableton Live and want to do more jamming/live type tracks than before. I'm starting to get the hang of Live, but if it can do this I'd love to find out how.

I havent had a chance to try it yet but Musolomo looks very clean fast and fun

I spent a two weeks creating multi-layer drum instruments in exs editor - Im not going back down that road...
