Hi There,
I know it's possible to record audio using Express but is it possible to sample stuff such as acapella's using the software ?

I'm guessing you mean taking an a capella track from a 12"/CD and remixing it with a new backing track? You could certainly import the file to Logic Express as audio, then chop it up and use it how you like across your track. Express supports Apple Loops, too, which can stretch or compress to match the tempo of your track, so you should be able to convert the a capella audio file to an Apple Loop and get busy. There is also a sample player included with Express (perfect for mutating and triggering samples), but not an actual sampler. Pro has that.
