Just starting up making music with a 1GHz G4 Powerbook and reasonably new to Macs. I currently have 256MB RAM which I've been told is fine for now, but realise that I will need more. Is it possible to just get buy extra RAM and have it installed (if so, can I install it myself?), or am I stuck with what I've got?

For audio the RAM is essential; try to bring it to the max otherwise your computer won't be of much use. 256 MB is very little for the current OS, and you might have some trouble running it.
Try to get RAM from a vendor which has a warantee in case it fails; if you have unexplained freezes traceable to the RAM they should replace it without much trouble. I did, and had the RAM replaced about 3 years ago, by Ramjet. Check prices too - the price of the same chips can vary by a factor of 2 from vendor to vendor.

I have a similar question about upgrading ram. I have a G4 dual and I know there are four slots for Ram. Does anyone know whether the limit is 1gb or 2?

The G4 ram limit is 2GB. But I think that you will not get the full benefit unless you are using OSX. I remember there is some issue with OS9 accessing the full 2gig. To use more ram it has to be a G5.
