The thing to figure out is what is important to you. A Powerbook will run all of those apps. I'm running Cubase SX2 with pretty good results. I certainly do run into the limits of the system when I am using some of the heavy synths (CS-80 in particular) but I just end up freezing those. (although I wish freeze would allow one to see the audio file and edit it)
I have been using Hypersonic a lot. It is pretty good on the CPU and allows my to run a lot of tracks at once. I think it sounds good myself.
A G5 will give you much more power, but no portability. I can tell you that for me having a Powerbook is absolutely fantastic. I love, love, love the ability to work on music anywhere, anytime. I am looking forward to gigging with the Powerbook. A small system rules, at least for me.
BTW, there is a 3rd option. There is going to be a G5 iMac in september.
