Try GarageBand for a while. It might do everything you need. I was surprised by its capability.

Tracktion is an alternative (www.rawmaterialsoftware.com). It's only $80, is really easy and fun to use, and has an impressive feature list. Unlike GarageBand, it can host VST instruments, among other things.

(Although GarageBand can host AU instruments, and Tracktion can't -- at least, not in the current version. For something that can host both types of instruments, you're looking at more money, most notably the upcoming version 4 of Ableton Live.)

Although Garageband hosts AU instruments only, there is a program that converts VST plug-ins to AU plugs called fxpansion
http://www.fxpansion.com/
I am using Logic Audio and converted several dozen VST plugs to AU without a hitch. When I got Garageband I was pleasantly surprised to find them available (too bad the built-in Logic plugs weren't)

re VST to audio unit conversion *wrappers*...I found this recently but not sure about cost. might be worth a look though

Product Description FXPVSTAU

The VST to AudioUnit Adapter for Mac OS X is a highly-integrated plug-in wrapper that allows users of AudioUnit-compatible applications such as Emagic's Logic Audio 6.x and MOTU's Digital Performer 4.x to integrate VST plug-ins and instruments seamlessly in to their working environment.

Once installed and configured, the wrapper creates "virtual AudioUnits" for each of your VST plug-ins, which behave exactly the same as true AudioUnits in every respect. It uses virtually no CPU (less than 0.1% per instance on a 550MHz PowerBook G4), and offers total compatibility with a huge selection of VST plug-ins from a wide range of vendors. It's also incredibly easy to u

I have the wrapper, but most of the commercial plugs are in Audio Unit format now, I don't even have to use mine anymore.
