Basically, to save you the trouble of me wording it badly, I've made a video to explain my troubles. Any help is much appreciated, as this is massively frustrating.

I agree with houstonmusic that the UNO or MOTU would be fine choices. One thing I thought I saw in your video, however, concerned your audio midi setup. If I viewed it correctly, you did not finish the configuration of your Yamaha keyboard. You need to add it to the view (add device), go into the icon that appears and define the device as your specific keyboard (by manufacturer and unit name, if possible), set up its capabilities concerning MIDI in and out, apply the changes, and then, when you return to the main Audio MIDI Setup view, connect your keyboard and USBMIDI device with virtual cables.

I have no idea if that will solve your problem, but, based on your video, I do not see how your keyboard is communicating to your computer at all.
