I don't know how tough these are, or whether they're all ideally suited to live work, but the new SE Electronics range is getting good reviews, particularly the Z5600. There's also the Rode range, espec. NTK. Audio-Tehcnica do some nice mics, plus there are cheap condenser mics from Samson and Octavia. One choice might be the AKG C1000S - a good starter condenser, pretty tough, decent sound. Don't know if it would be better having several of them dotted around your set-up. If you really only want one, I'd get the best quality you can afford to ensure every nuance is picked up. That Z5600 does look nice.

depending on how much you can spend;
-Rode NT2...very good mic/switchable between omni and cardioid
-AKG C3000... bit more expensive, beautifull highs
-Neumann TLM103...neumann quality at reasonable price.

C1000 is nice as well and cheap
