you ought to try Audacity it has been very stable for me I would suggest Spark ME but it is no longer on their website.

Sound Studio works very well, and is great for digitizing tapes and records (has nice interface for putting in markers, splitting into files, etc.)
However, I think it is limited to 16-bit resolution.
I tried Audacity, but it randomly crashes on me.

Try Amadeus (http://www.hairer-soft.com) and, if you need something more sophisticated, DSP-Quattro (http://www.dsp-quattro.com)
